Sugar Free Chocolate Chip Banana Bites

Second recipe post in a row- I suppose this is very nearly a food blog now so I might have to change the name! Unless you like baking in your wardrobe, which is unlikely, but not impossible. Who knows?
 Anyway. today's recipe uses store cupboard ingredients to create healthy, bite-size cookies which contain no refined sugar. They're also a great way to use up overripe bananas and get a great little energy boost mid afternoon. Peanut butter provides protein, banana and maple syrup give you natural sugars to keep your energy up and oats provide slow release energy and keep you feeling full. If you use dark chocolate without milk or lactose then they're also vegan, dairy free and gluten free! In case you needed another good reason, they're super easy- just mix everything in a bowl, pop on a tray then bake...ready in less than 10 minutes! Enjoy~

100g/4oz oats, 1 tbsp smooth peanut butter, 1 overripe banana, 3 tbsp soya milk, 1 tsp maple syrup, 4 squares dark chocolate- chopped into small chunks. (Makes around 10 small cookies)


1. Preheat the oven to 220 Celcius (200 fan assisted)
2. Peel and mash the banana in a bowl and stir in the peanut butter.
3. Stir in the remaining ingredients and mix well
4. Roll into walnut size balls, place on a baking tray and press down lightly
5. Bake for 5-8 minutes until firm and turning golden on the edges.
